Fischer’s Pelican Restaurant

Looking for an evening of entertainment and delectable food? Fischer’s Pelican Restaurant in Sewell hosts a monthly cooking class in a relaxed welcoming atmosphere right in their main dining area. The restaurant is owned and operated by Bill and Eileen Fischer. With his lovely and amiable wife Eileen welcoming the class participants, Chef Bill Fischer and his staff worked feverishly to teach, entertain and feed about forty (40) folks at the class.

On the evening the Fearless Foodies attended, salmon was the featured fish. Chef Fischer started by filleting a gorgeous Scottish salmon and proceeded to educate us on preparation tips for our meal. We started with Cured Salmon with Orange and Fennel Chiffonade, a most tasty and refreshing appetizer/salad. The main course was Salmon Loraine, delicious thick-cut salmon fillets with roasted red pepper and topped with melting chunk goat cheese. Mine was perfectly cooked and plated most appealingly. We finished with coffee and dessert, a panna cotta that was rich gelatinized vanilla cream served with caramel sauce and berries.



Chef Bill Fischer has acquired his vast cooking
and demonstration skills in the nearly thirty (30) years since he began his culinary school training. This likeable down to earth fisherman was a born “water rat” who gained a breadth of experience in his formative years, the stuff of which lifetime stories are told. Growing up in West Cape May, New Jersey with a family including five (5) brothers and two (2) sisters, Fischer learned the value of hard work early. He honed his fisherman skills and by age fourteen (14) was working on a lobster boat 20-25 miles offshore “with just a watch and a compass” as guides.
After graduating culinary school, Fischer set off to St. Thomas to work alongside one of his mentors, Steven Jelliea, a Certified Master Chef who is now the coach of the U.S. Olympic Culinary Team. With myriad experiences, Chef Fischer was the Executive Chef at Café Lamberti from 1992-2008. In February, 2009, he purchased and introduced the now Fischer’s Pelican Restaurant.
His mission statement of “one bite and you’re hooked” shall ring true on your first visit. The quality of the seafood is superior, and Fischer’s execution of the meal’s components exquisite. He maintains a seasonal perspective with the fish and the fruits he uses, and I highly recommend that you “ride the seasonal wave” over to Fisher’s Pelican for a delightful meal.
The next cooking class shall be held on January 11, 2012. Tickets are only $35 per person for a three-course meal and are sold in advance.
